Greetings All:

 

Eight years ago, Eating Better, Feeling Better, Living Better Inc. launched its first newsletter, and we are just as excited now as we were then.  Our mission is to help change unhealthy eating habits and lifestyles of those in the community to healthy habits and lifestyles.  Our monthly newsletter is one of EFL's ways of doing just that. 


In this month's newsletter, you will find tips and one of the recipes from our previous monthly letters.  Please enjoy and as John prayed, we also pray that you enjoy good health and that all will go well with you, even as your soul gets along well.

 TIPS OF THE MONTH


BENEFITS of GINGER


For indigestion, gas, throat, and nose congestion, try ginger.  Grate and squeeze it into hot tea, add to juices, baked goods, and smoothies, to name a few.  For stomach cramps, munch on ginger.

 

HEALTHY FATS


Healthy fats like olive oil, almonds, avocados, and salmon are those that are unsaturated, which are usually liquid at room temperature.  These fats help keep your brain, blood vessels, and heart healthy.  Add a handful of blueberries for additional brain power.


RECIPIE OF THE MONTH


CHICKEN NUGGETS


Ingredients:

2 lg eggs

2 Tbsp butter melted

1/2 c ground flax seed

1/2 c grated parmesan

1/2 tsp. onion powder

1/4 tsp. garlic powder

1 lb. boneless, skinless chicken breast, cut into 1 1/2-inch pieces

1/4 tsp each sea salt and pepper


DIRECTIONS


1.  Heat oven to 375 degrees.  Line a baking sheet with parchment paper.

2.  Whisk together eggs and butter in a bowl.  Combine the next 4 ingredients and 1/4 tsp each sea salt and pepper in a shallow bowl.

3. Coat chicken in egg mixture and then roll in flaxseed mixture.  Place on prepared pan.

4. Bake chicken, turning once until cooked through, about 20 minutes.
